Abstract
This paper deals with the humidity and pH of the edible parts of the fruit the “piquizeiro”, Caryocar coriaceum Wittm. a plant widespread in most of the states in Brazil. Piqui fruits from Ceará and Piaui. Brazil were analyzed.
