Cambios morfológicos, químicos y físicos en la maduración de frutos de manzano
Abstract
Las características morfológicas, químicas y físicas de los frutos de manzano (Malus domestica Borkh.) cv. Red Delicious, resultantes de un estudio de dos años durante la maduración, fueron descritas por medio de gráficos circulares y se seleccionaron siete características. Los perfiles variaron con sucesivas recolecciones y, en ambos años, ocurrieron marcados cambios en la actividad bioquímica: el contenido de sólidos solubles y los niveles de almidón aumentaron y la firmeza de la pulpa disminuyó. Las mayores tasas de cambio en estos índices se produjeron entre las dos últimas semanas de estudio, en ambas temporadas. Durante el mismo período, los frutos continuaron creciendo en peso fresco, largo (L) y diámetro (D). No hubo cambios sustanciales en la forma del fruto (relación L/D).
