Summary. ripe. The inability of the fungus to grow on the peels of green fruits is called dormancy. This phenomenon has remained unexplained for many years. Data are presented here showing that there is no toxic, cold-water-soluble substance in the peels of either green or ripe banana fruits. However, extracts of green peels are poor in nutrients, causing a lower level of germination
